Tomato & Vegetable Risotto with Rocket Salad

250g risotto rice
500ml passata
Vegetable stock dissolved in 250 ml water
1 courgette diced
2 cloves of garlic
1 carrot diced
5 mushroom
1 large onion

Put rice in a pot and slowly add stock mixture and continuously stir and add fluid once absorbed.
Add passata bit by bit and continue to stir until fully absorbed and rice is cooked
In another pot at the same time stir fry vegetables and once soft add to risotto mixture.
Add rocket and baby tomatoes to garnish.
