Tomato & Red Lentil Soup

1 tin of tomatoes or passata

1 vegetable stock cube

Red lentils washed

1 large onion (chopped)

Teaspoon of rapeseed or olive oil

2 gloves of garlic (chopped)

 

Method:

In a pot heat olive oil and fry off garlic and onions for a few minutes.

Add red lentils and stir but don’t allow them to burn.

Add in passatta and stir.

Add water and stock cube. Leave to cook for 20 mins.

Blend ingredients together and enjoy.
