Tomato & Bean Soup

This tomato and bean soup is a nutritious way to warm you up on a
cold days. Its packed full of protein, vitamins and minerals.

Teaspoon of olive oil or rapeseed oil
1 onion
2 x 400g can of chopped tomatoes
3 carrots diced
2 parsnips
2 celery sticks
250g can chickpeas
250g can butterbeans
2 veg or chicken stock cubes

1.Heat the oil in a non stick pan. Add onion and cook for 1-2 minutes until soft.
2.Add the stock, tomatoes, parsnips, carrot and the rest of the vegetables.
3.Simmer for 35- 40 minute
4.The soup is ready when vegetables and beans are soft.
5. This recipe gives 6 good portions.
