Quinoa & Potato Croquettes

Quinoa is one of the most protein rich foods. It is a complete protein containing all 9 amino acids. It contains almost twice as much fibre as most other grains. Quinoa contains iron and riboflavin and is rich in magnesium and manganese.
This recipe is an alternative to using quinoa in salads or as a side with stir frys.

Ingredients:
2 potatoes cooked and mashed
1cup of cooked quinoa
3 chopped spring onions
1 and half teaspoon cumin
1and half teaspoon garam masala
Some ginger(I used ground)
Coriander (I used ground)
Coconut butter for frying or any other healthy oil

Method:
Combine quinoa and potato together and add spices and spring onion. Roll into ball and put on heated non stick pan. Flatten out with spatula. The ingredients here can be changed to your own taste. Spices can be changed or cabbage ,kale or red onions would be nice instead of spring onions.
