Lentil Rissoles

Ingredients:
1 and half cup of red lentils(Washed and boiled for about 20 mins)

2 eggs(beaten)

2 grated carrots

1 onion(finely chopped)

3 garlic cloves (cut and minced)

half a cup of breadcrumbs

1 teaspoon of ground corriander

1 teaspoon of cumin

1 teaspoon of tumeric

Oil for frying (I recommend coconut butter for added flavour or rapeseed oil)

 

Method:
Firstly put grated carrots, onion and garlic into a hot pan and add spices until soft. In a separate bowl mix your cooked lentils with the eggs and breadcrumbs and mix. Then add in the mixture in the pan and mix all together in bowl. With your hands roll the mixture into balls and place on the hot pan. Flatten into patties with spatula. You will be able to cook about 4 at a time. Cook until golden brown. I usually transfer them to the oven for a few minute just to ensure they are cooked throughout.

These can then be enjoyed for lunch or dinner. A healthy, high protein, nutritious, homemade meat alternative delight!!
