Beetroot Hummus

Beetroot is rich in calcium, iron and vitamins A and C. Its also high in manganese and pottasium.

For this recipe you will need:

One cooked beetroot

Can of chickpeas

Lemon juice from one lemon

3 garlic cloves

2 tablespoons of tahina

Black pepper and salt to season

 

Method:
Add tahini to blender and and blitz for 20seconds. Add lemon juice and garlic. Drain and wash chickpeas. Add half the chickpeas and some water to blender and blitz. Add cumin, salt and pepper and remainder of chickpeas. Add cooked beetroot bit by bit and some water until you reach your desired consistency.
