Gluten Free and Vegan Feel Good Flapjacks

IMG_20140613_222010Flapjacks can sometimes be sugar laden but these homemade healthy flapjacks are a great alternative to shop bought ones and they are super easy and quick to make not to mention gluten free, vegan and feel good food!! These flapjacks are perfect to ward off that afternoon slump or a good energy boost before an exercise session.

Ingredients

  • 100g organic porridge oats
  • 130g dried fuit( I used dates and apricots)
  • 80g of nuts or seeds( I used a teaspoon of chia and almonds)
  • 20g of desiccated coconut
  • 2 teaspoons of melted coconut oil
  • 3 teaspoons of agave
  • teaspoon of cinnamon

For the topping

  • A couple of squares of dark chocolate

Method

Mix all your dry ingredient in a bowl. Blitz in the food processor.Transfer into a bowl and add cinnamon, melted coconut oil and agave. Place in a lined tin and press down firmly.Cook in the oven at 180 Celsius for 20 minutes. Remove from the oven. Drizzle melted chocolate over the top. Place in the  fridge over night to cool. This recipe is Gluten free and Vegan. Enjoy as a sweet treat!
